🥩 Schnitzel (Yugoslavian version of breaded porkchops)

Ingredients

  • 1 pork loin roast (least fat)
  • Salt, to taste
  • 6 eggs, beaten (more if needed)
  • Progresso Italian bread crumbs
  • Vegetable oil (½ inch deep in pan)

Directions

  1. Slightly freeze pork loin for easier slicing. Cut into thin ⅛” slices, trimming fat.
  2. Pound each slice with meat tenderizer; sprinkle lightly with salt.
  3. Set up breading: eggs in one dish, bread crumbs in another.
  4. Bread pork: coat in crumbs → dip in egg → coat again in crumbs.
  5. Heat oil in frying pan. Fry until golden brown on both sides.
  6. Drain on paper towels. Serve hot with lemon wedges or potato salad.

🍲 Garbage (Mac and Meat)

Ingredients

  • 1 lb ground beef
  • 1 – 10.75 oz. can Campbell’s tomato soup
  • 1 box (16 oz) Creamettes elbow macaroni
  • Salt & pepper, to taste

Directions

  1. Cook macaroni; drain and set aside in large bowl.
  2. Brown ground beef, Drain fat.
  3. Stir in tomato soup
  4. Simmer 3-4 minutes, stirring gently.
  5. Add ground beef and tomato soup to macaroni
  6. Still until all the macaroni and beef are completely mixed
  7. Serve hot.

🥞 Palachicin (Crepes)

Ingredients

  • 3 eggs
  • 1 tsp sugar
  • ½ tsp salt
  • 1 cup milk
  • 1 cups flour
  • 1/3 cup club soda or 7-Up

Directions

  1. Beat eggs with sugar and salt until smooth.
  2. Stir in milk and flour until batter is lump-free.
  3. Add Club soda or 7-Up and mix gently (batter will be thin).
  4. Heat a lightly 10-12″ greased skillet. Pour in enough batter to cover about 6-8″ in the center. lift pan and rotate to fill batter to the sides to coat the bottom of the pan.
  5. Cook until edges slightly brown, flip, and cook briefly on the other side until brown.
  6. Repeat with remaining batter.
  7. Serve with jam, fruit, Nutella, or sweet cheese filling.
